Selection of fine-grained, medium-fine French oak. 24 months seasoning for the 500L thickness 29 mm, 36 months for the 600L thickness 40 mm.
The rotary fermentors allows you to vinify entirely in barrels using this equipment: 220 mm diameter trap, valve, tasting tap, wine lees braker and stands with rollers.
This allows the aromas to be combined and the tannins of the wood to be integrated with those of the grapes. This marriage gives the woodiness great finesse and more length on the palate.
